近年,ライフスタイルや食生活の変化に伴い,若者は魚が嫌いで肉好きが増えていると聞く。そこで,18歳から23歳の男女と実際に料理を作る親等を対象に魚嗜好および魚食の実態について主にアンケート調査を行い検討した。その結果,若者と親等もほとんど魚好きであり,調理方法も若者の好む魚料理と親等がよく作るものが同じであることが判明した。今のところ若者の魚離れはさほど心配ないが,魚の嗜好は家庭での食生活が大いに関係しているので,今後は家庭での食事に魚料理をもっと取り入れるべきである。 |

It is often said that the young dislike fish and their preference for meat is increasing of late years with the changes of their life style and eating habits. So we studied the liking for fish and fish-eating of the young of today. We researched this subject mainly by questionnaires from men and women aged 18 to 23 years and also the parents who cook for them actually. From this research it was found that almost the young and parents had a liking for fish, and that fish dishes the young like were the same ones as their parents usually make. For the present there is not so much worry about the young's keeping from fish-eating. But for the future many more fish dishes should be served on the table at home, because it is thought that the eating habits in the home has a great influence on the liking and disliking for fish. |
