          <datacite:description>えんどうの一般成分の測定、抗酸化活性およびえんどう料理の検討を行った。えんどうの水分は13.6%、たんばく質は21.5%、脂質は2.2%、炭水化物は60.2%、灰分は約2.5%であった。えんどうはミネラルが豊富で、栄養価の高い食品であった。えんどうは抗酸化作用があり、食品機能性が高かった。えんどうの簡単な料理を紹介した。</datacite:description>
